Simple Apple Cake (eggless and vegan)


Apple Cake

2 Cups All-purpose Flour
2 ½  Cups heaping chopped apples
1/2 tsp. salt
1 1/4 cup sugar
½ tsp. baking soda
1 tsp. baking powder
½ cup vegetable oil
1 tsp. vanilla extract
1 1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/3 cup soy yogurt
1 cup chopped walnuts
1/2 cup apple sauce

 topping
3 tbsp. sugar (I’m using dermerera)
1 tsp. cinnamon

Directions
1.    Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 11" spring foam pan.
2.  In a large bowl, sift together flour, sugar, salt, baking powder, soda, cinnamon, and nutmeg.
3.  Blend wet ingredients together.  ½ an apple, oil, yogurt, and sugar.
4.   Make a well in the center and add wet ingredient mixture. Mix well (batter will be thick). Fold in chopped apples and nuts. Spread into a spring foam pan or a 7x11 inch pan.
5.   In a small bowl, mix 3 tablespoons sugar with 1 teaspoon cinnamon. Sprinkle over cake.
6.  Bake at 350 degrees F (175 degrees C) for 40 to 45 minutes, or until a toothpick inserted into cake comes out clean.
